You may have noticed that Monash have recently updated the app to include low FODMAP serves of Apple.
While the serve size is small and doesn’t allow an apple for morning tea, it does allow us to experiment with Apple in baking. And what better way to start than with an apple muffin.
This recipe is suitable for both the low FODMAP diet and the RPAH Moderate Elimination diet, so yes you can have your cake and eat it too!
Low FODMAP & Moderate RPAH Elimination diet
Prep time: 5 minutes
Cook time: 15-20 minutes
Sift flour, baking soda and baking powder into a bowl. Mix in rolled oats and brown sugar.
In a separate bowl combine egg, milk and vanilla essence. Stir wet mixture into dry ingredients, then fold in peeled and grated apple.
Line a muffin tray with baking paper or muffin cases and fill to just below the top. Bake at 200° degrees Celsius (400°Fahrenheit) for 15-20 minutes until a skewer comes out clean
